This recipe makes two loaves, plenty for the family to eat one-and-a-half for dinner and still have leftovers for Lance to use in a sandwich the next day. You can also use all turkey, all chicken or all beef instead of this combination.

Ingredients

  • 2 eggs
  • 1 onion, grated
  • 1 cup dry bread crumbs
  • 1/2 cup chopped squeezed-dry thawed spinach
  • 1 can (19 oz/540 mL) stewed tomatoes
  • 3/4 tsp salt
  • 1/2 tsp dried oregano
  • 1/2 tsp pepper
  • 1 lb lean ground beef
  • 1 lb lean ground chicken or lean ground turkey
  • 2 tbsp tomato paste

Preparation

In large bowl, mix together eggs, onion, bread crumbs, spinach, 1/2 cup (125 mL) of the tomatoes, salt, oregano and pepper. Mix in beef and turkey. Pat into 2 greased 8- x 4-inch (1.5 L) loaf pans.

Stir tomato paste into remaining tomatoes; pour over loaves. Bake in 350°F (180°C) oven for 1 hour or until meat thermometer inserted in centre of loaf registers 180°F (82°C).
