This is a healthful alternative to the usual calorie-laden cheese dips served at parties. Serve with sliced radishes, blanched vegetables and crackers.

Method

Toss cauliflower with oil; arrange in single layer on lightly greased rimmed baking sheet. Bake in 425?F (220?C) oven, turning once, until tender and light golden, about 20 minutes.

In food processor, purée together cauliflower, cannellini beans, mayonnaise, yogurt, warm water, lemon zest, lemon juice, garlic, sumac, salt and pepper until smooth.

Makes about 2 cups.
