Chai Iced Tea

A blend of spices and tea, chai is an Indian drink enjoyed either hot or cold. Serve with orange wedges.

Suggested Recipes

4 bags black tea (such as Darjeeling or orange_pekoe)
1/3 cup (75 mL) granulated sugar
1 stick cinnamon
2 slices gingerroot
2 cloves
2 cardamom pods, broken
1/4 tsp (1 mL) aniseeds
Preparation:
In large heatproof measure or bowl, steep tea in 8 cups (2 L) boiling water for 4 minutes. Discard bags.
Meanwhile, in saucepan, bring sugar, cinnamon, ginger, cloves, cardamom, aniseeds and 1 cup (250 mL) water to boil. Reduce heat to medium-low; simmer until clear and spices infuse, about 5 minutes. Add to tea; let cool to room temperature, about 30 minutes. Refrigerate until cold, about 2 hours.
Strain through cheesecloth-lined sieve into pitcher. Serve with ice cubes.
