Ingredients

  • 1/3 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp nutmeg
  • 2 eggs
  • 1 cup milk
  • 1 tbsp butter, melted
  • 2 cups shredded Cheddar cheese
  • 1 package (300 g frozen) chopped spinach, thawed
  • 1/4 cup finely chopped sweet red peppers
  • 1 green onion, chopped

Preparation

In large bowl, stir together flour, baking powder, salt, pepper and nutmeg.

In separate bowl, whisk eggs; whisk in milk and butter. Stir in cheese, spinach, red pepper and onion. Pour over flour mixture; stir just until combined. Pour into greased 11 - x 7-inch (2 L) baking dish. Bake in 350°F (180°C) oven for about 30 minutes or until set. Let cool for 10 minutes; slice into squares.
