Ingredients
- 1-1/2 cups finely chopped pitted tart red cherries 1-1/2 1-1/2cups cupsfinely chopped pitted tart red cherries
- 1-1/2 cups crushed raspberries 1-1/2 1-1/2cups cupscrushed raspberryraspberries
- 1 tbsp lemon juice 1 1tbsp tbsplemon juice
- 1/4 cup granulated sugar 1/4 1/4cup cupgranulated sugar
- 1 box (49 g) light pectin crystals 1 1box box(49 g) light pectin crystals
Preparation
In large bowl, stir together cherries, raspberries and lemon juice. Add sugar. Mix in pectin crystals; let stand for 30 minutes, stirring occasionally.
Pour into clean airtight containers, leaving 1/4-inch (5 mm) headspace. Let stand, undisturbed, until set, about 24 hours. Store in refrigerator for up to 3 weeks or freeze for up to 8 months.
