  • 4 cups sliced, peeled peaches 4 cups sliced, peeled peaches
  • 1 cup peach juice 1 cup peach juice or mango juice
  • 1 cup orange juice 1 cup orange juice
  • 1/4 cup lime juice 1/4 cup lime juice
  • 2 tbsp liquid honey 2 tbsp liquid honey
  • 1 tsp ground ginger 1 tsp ground ginger
  • 1/4 tsp cardamom 1/4 tsp cardamom
  • 1/4 tsp cinnamon 1/4 tsp cinnamon
  • 1 pinch salt 1 pinch salt
  • 1 pinch ground cloves 1 pinch ground cloves
  • 1/2 cup buttermilk 1/2 cup buttermilk or plain yogurt
  • 2 tbsp amaretto liqueur 2 tbsp amaretto liqueur or apricot brandy

Preparation

In small skillet, toast almonds over medium heat, stirring often, until golden, about 3 minutes. Set aside.

In large saucepan, combine peaches, peach juice, orange juice, lime juice, honey, ginger, cardamom, cinnamon, salt and cloves; bring to boil. Reduce heat, cover and simmer until peaches are very soft, about 12 minutes. Let cool.

In batches in blender or food processor, purée until smooth. Transfer to bowl; stir in buttermilk, and amaretto (if using). Cover and refrigerate until cold, about 4 hours. (Make-ahead: Refrigerate in airtight container for up to 2 days.) Ladle into bowls. Sprinkle with toasted almonds.
