Chunky Cucumber Slices with Tarragon
Tarragon replaces the usual dill in this Italian cucumber salad.
Servings: 8
Ingredients:

2 large cucumbers
1 medium red onion
2 tbsp (25 mL) oil
1/4 cup (50 mL) white wine vinegar
1 tbsp (15 mL) tarragon
1/2 tsp (2 mL) salt
Pepper to taste
Preparation:
Peel cucumbers and cut in half lengthwise; using a spoon, scoop out seeds. Cut crosswise into 1/4inch (5 mm) slices. Peel onion, thinly slice and separate into rings.
Combine cucumbers and onions with remaining ingredients. Taste and adjust seasoning. Serve immediately or cover, chill and serve within 2 hours.
