Ingredients

  • 3/4 cup chopped walnuts 3/4 cup chopped walnuts
  • Streusel:
  • 1/3 cup packed brown sugar 1/3 cup packed brown sugar
  • 1/4 cup all-purpose flour 1/4 cup all-purpose flour
  • 1/4 tsp cinnamon 1/4 tsp cinnamon
  • 2 tbsp cold butter 2 tbsp cold butter
  • 1/4 cup chopped walnuts 1/4 cup chopped walnuts

Preparation

Streusel: In small bowl, stir together sugar, flour and cinnamon. Using pastry blender or 2 knives, cut in butter until in coarse crumbs. Stir in walnuts; set aside.

In large bowl, beat together bananas, sugar, butter, eggs and vanilla. In separate bowl, whisk together flour, baking powder, baking soda and sa< stir into banana mixture. Stir in walnuts. Scrape into greased and floured 9- x 5-inch (2 L) loaf pan; sprinkle with streusel.

Bake in 350°F (180°C) oven until cake tester inserted in centre comes out clean, about 1 hour. Let cool in pan on rack for 15 minutes. Turn out onto rack; let cool completely. (Wrap in plastic wrap and store for up to 2 days or overwrap in heavy-duty foil and freeze for up to 1 month.)
