Ingredients

  • 1 tbsp vegetabIe oil
  • 1 shallot or small onion, minced
  • 1 clove garlic, minced
  • 2 cups sliced mushrooms
  • 2 tbsp minced fresh parsley
  • 2 tbsp brandy or sherry, (or 1 tbsp/15 mL lemon juice)
  • 1/4 tsp salt
  • 1/4 tsp dried thyme
  • 1/2 tsp truffle oil, (optional)

Preparation

In skillet, heat oil over medium heat; fry shallot and garlic until softened, about 2 minutes. Add mushrooms, parsley, brandy, salt and thyme; fry, stirring occasionally, until mushrooms are lightly browned, about 8 minutes. Stir in truffle oil (if using).
