Cottage Cheese Patties with Marinated Vegetable Salads
Glomms kuak, or dill-flavoured cottage cheese patties, are served, nestled in a lettuce leaf, with cheese, marinated carrots and cucumbers for a delicious lunch or breakfast at the d'8 Schtove restaurant. Prepare the vegetables a day ahead, or store them for up to three days in the fridge.

Ingredients:

1 egg
1-1/4 cups (300 mL) Pressed cottage cheese
1/4 cup (50 mL) Minced onion
1/4 cup (50 mL) all-purpose flour
1-1/2 tsp (7 mL) Chopped fresh dill
1 clove garlic, minced
1/4 tsp (1 mL) salt
Pinch pepper
1 tbsp (15 mL) butter
Marinated cucumber salad
Marinated carrot salad
Preparation:
In bowl, beat egg lightly; blend in cottage cheese, onion, flour, dill, garlic, salt and pepper. Divide into 8 portions. On floured surface and using floured hands, shape dough into patties about 1/2 inch (1 cm) thick.
In large nonstick skillet, melt half of the butter over medium heat; fry 4 patties until crisp and golden brown, about 2 to 3 minutes per side. Repeat with remaining butter and patties. Serve with Marinated Cucumber Salad and Marinated Carrot Salad.
