Crunchy Oven-Fried Fish Fillets

Crunchy coated fillets have all the appeal of deep-frying without the fat. Serve with carrot, celery and rutabaga sticks, and hot potato salad plus a dollop of Light Tartar Sauce or salsa.
Ingredients
- 2 tbsp all-purpose flour
- 1/2 tsp salt
- 1/2 tsp chili powder
- 1/2 tsp dried oregano
- 1/4 tsp pepper
- 1 egg
- 1 tbsp vegetable oil
- 2 cups flaked corn cereal, crushed
- 1 lb fish fillets
Preparation
In shallow bowl, combine flour, salt, chili powder, oregano and pepper.
In separate shallow bowl, whisk egg with oil.
In third bowl, spread cereal.
Dip fillets into flour mixture, shaking off excess. Dip into egg mixture, then cereal. Bake on greased baking sheet in 450°F (230°C) oven, turning once, for 6 to 10 minutes or until golden and fish flakes easily when tested with fork.
