This simple oven pancake will delight kids as it puffs up. Little ones can share a pancake, while teens will probably want one all to themselves. This recipe requires adult supervision because the pans need to be hot when you pour in the egg mixture.
Ingredients
- 4 eggs
- 1 cup all purpose flour
- 1 cup milk
- 2 tbsp butter
- 4 lemon wedges
- 2 tbsp icing sugar
Preparation
2- Divide butter between 2 lightly greased 8-inch (1.2 L) round metal cake pans. Heat pans in 400°F (200°C) oven until bubbly, 1 to 2 minutes.
3- Leaving pans in oven, immediately pour half of the egg mixture into each. Bake until pancake puffs and edges are browned, about 15 minutes.
4- Quickly invert onto plates. Squeeze lemon over top; sprinkle with sugar
