Ingredients

  • 6 white potatoes , (about 2 lb/1 kg), peeled6 white potatoes or yellow potatoes, (about 2 lb/1 kg), peeled
  • 2 tbsp all-purpose flour 2 tbsp all-purpose flour
  • 1 tsp salt 1 tsp salt
  • 1/2 tsp pepper 1/2 tsp pepper
  • 1/2 tsp paprika 1/2 tsp paprika
  • 3 tbsp butter , melted3 tbsp butter, melted
  • 1 tsp chopped fresh thyme 1 tsp chopped fresh thyme

Preparation

Without cutting all the way through, cut 1/4-inch (5 mm) thick slices in potatoes.

Blend together flour, salt, pepper and paprika; roll each potato in mixture. Place, uncut base down, in ovenproof dish or roasting pan. Sprinkle with butter and thyme.

Bake in 375°F (190°C) oven until tender, fanned out, golden and crispy, about 1-1/4 hours. To serve, drizzle with any browned butter in pan.
