Fruity Tofu Smoothie
Frozen fruit and tofu make this smoothie thick, creamy and nutritious. Whip it up in the morning and pour it into a vacuum bottle. Tell your child to shake it up and you'll find he'll be asking for one every week.

1 cup (250 mL) fresh or frozen fruit (such as mixed tropical fruit, peaches or strawberries)
1 cup (250 mL) orange juice
1/2 cup (125 mL) silken or soft tofu
1/2 cup (125 mL) plain low-fat yogurt
2 tbsp (25 mL) lemon juice
2 tbsp (25 mL) liquid honey
1 banana
Preparation:
In blender, purée together fruit, orange juice, tofu, yogurt, lemon juice, honey and banana until smooth.

Vegan Fruity Tofu Smoothie: Omit yogurt. Increase silken tofu to 1 cup (250 mL). Increase lemon juice to 3 tbsp (50 mL). Replace honey with corn syrup.Tip: Frozen bananas make smoothies thick and frosty. Wrap peeled ripe bananas tightly in plastic wrap and freeze.
