This Indian-inspired one-pan dinner is an easy weeknight meal. Aloo gobi means potato cauliflower, which is often seasoned with garlic, onion, ginger, curry and turmeric, which gives it its yellow colour.

Ingredients

  • 1/2 cup 1/2cupdried bread crumbs
  • 4 tsp 4tspgaram masala
  • 1/4 tsp 1/4tspground coriander
  • 1/4 tsp 1/4tspgarlic powder
  • 1/4 tsp 1/4tsponion powder
  • 1 pinch 1pinchcayenne pepper
  • 1 pinch 1pinchsalt
  • 4 4skinless chicken drumstickskinless chicken drumsticks
  • 1 cup 1cupmedium shredded unsweetened coconut
  • 1 1eggeggs, beaten
  • Aloo Gobi:
  • 1-1/4 tsp 1-1/4tspground cumin
  • 3/4 tsp 3/4tspground coriander
  • 3/4 tsp 3/4tspcurry powder
  • 3/4 tsp 3/4tspturmeric
  • 1/2 tsp 1/2tspgarlic powder
  • 1/4 tsp 1/4tspsalt
  • 1 pinch 1pinchcayenne pepper
  • 2 tbsp 2tbspvegetable oil
  • 2 cups 2cupscauliflower floretcauliflower florets
  • 12 oz 12ozmini yellow-fleshed potatoes, scrubbed and halved
  • Curry Yogurt Sauce:
  • 1/2 cup 1/2cupBalkan-style plain yogurt
  • 2 tsp 2tsplemon juice
  • 1/2 tsp 1/2tspliquid honey

Preparation

In resealable plastic bag, combine bread crumbs, garam masala, coriander, garlic powder, onion powder and cayenne pepper.

Sprinkle salt over chicken; add to bread crumb mixture and shake to coat. Remove to plate.

Add coconut to bread crumb mixture. Dip chicken in egg, letting excess drip off; return to bread crumb mixture and shake to coat.

Aloo Gobi: In small bowl, stir together cumin, coriander, curry powder, turmeric, garlic powder, salt and cayenne pepper; remove 1 tsp and set aside. Stir oil into remaining spice mixture.

Place cauliflower and potatoes in separate bowls. Divide oil mixture between bowls; toss to coat.

Arrange chicken and potatoes on lightly greased foil-lined baking sheet; bake in 400ºF (200ºC) oven for 20 minutes. Turn chicken and stir potatoes.

Add cauliflower to baking sheet; bake until juices run clear when chicken is pierced and cauliflower is beginning to brown, about 20 minutes.

Curry Yogurt Sauce: In bowl, stir together yogurt, lemon juice, honey and reserved spice mixture. Serve with chicken and vegetables.
