Gorgonzola, Fig and Arugula Mini Pizzas

Heavenly two-bite pizzas combine sweet fig jam with sharp, flavourful cheese. They are a snap to put together and are a dream for quick outdoor grilling. You can also bake these on a baking sheet in a 350ºF (180ºC) oven until the cheese is melted, 6 to 8 minutes.

  • 3 tbsp 3tbspfig jam
  • 12 12mini whole wheat pitawhole wheat pitas
  • 1/2 cup 1/2cupcrumbled gorgonzola cheese, (about 2 oz/55 g)
  • 1 tsp 1tspchopped fresh thyme
  • 1 cup 1cuparugula, chopped
  • 1/2 tsp 1/2tspvegetable oil
  • 1/2 tsp 1/2tsplemon juice

Spread fig jam on each pita; top with Gorgonzola cheese and thyme. Place on greased grill over medium heat; close lid and grill until cheese is melted, about 3 minutes. Transfer to serving platter.

Meanwhile, toss together arugula, oil and lemon juice; arrange over pizzas.

Substitute 2 oz (55 g) Brie cheese, diced, for the Gorgonzola.
