Vibrant and fresh pea purée will brighten up any menu. Frozen peas make this a quick and easy side dish.

Ingredients

  • 4 cups frozen peas 4 cups frozen peas
  • 2 cloves garlic , smashed2 cloves garlic, smashed
  • 1/2 cup whipping cream 35% 1/2 cup whipping cream 35%
  • 3 tbsp chopped fresh dill 3 tbsp chopped fresh dill
  • 3 tbsp unsalted butter 3 tbsp unsalted butter
  • 2 tbsp lemon juice 2 tbsp lemon juice
  • 1/2 tsp salt 1/2 tsp salt
  • 1/4 tsp pepper 1/4 tsp pepper

Preparation

In large saucepan of boiling salted water, cook peas and garlic until peas are tender and vibrant green, about 3 minutes. Drain.

In food processor, pulse together pea mixture, cream, dill, butter, lemon juice, salt and pepper until smooth. (Make-ahead: Refrigerate in airtight container for up to 24 hours. Reheat for 6 to 8 minutes over medium-low heat, stirring frequently.)
