Ingredients

  • Curried Yogurt Dressing:
  • 1 tbsp butter 1 tbsp butter

  • 1/2 tsp curry powder 1/2 tsp curry powder

  • 2 tbsp finely chopped green onion , (green part only)2 tbsp finely chopped green onion, (green part only)
  • 1/2 cup Balkan-style plain yogurt 1/2 cup Balkan-style plain yogurt
  • 2 tsp lemon juice 2 tsp lemon juice
  • 2 tbsp chopped fresh mint 2 tbsp chopped fresh mint

Preparation

Curried Yogurt Dressing: In small saucepan, melt butter over medium-low heat; stir in onion and cook until dark golden, about 4 minutes.

Stir in garlic, ginger, curry powder, salt, pepper and cumin; cook, stirring, for 30 seconds. Remove from heat; stir in green onion. Let cool slightly. Stir in yogurt and lemon juice. Stir in mint. Set aside.

Toss together asparagus, oil, salt and pepper. Place on greased grill over medium-high heat; grill, turning often, until tender and slightly charred, about 7 minutes. Transfer to serving platter. Top with dressing. Sprinkle with cashews (if using).
