Ham and Relish Tea Sandwiches
These sweet and savoury sandwiches are a hit with customers at Norman's Meats in Winnipeg. Sometimes simplicity is the key when it comes to making this favourite flavour combination.

1/3 cup (75 mL) mayonnaise
1/3 cup (75 mL) sweet relish
1/4 tsp (1 mL) pepper
12 oz (375 g) Black Forest ham, cubed
16 thin slices white or whole wheat sandwich bread
1/3 cup (75 mL) butter, softened
Preparation:
In large bowl, stir together mayonnaise, relish and pepper; set aside.
In food processor, pulse Black Forest ham until consistency of coarse bread crumbs. Add to mayonnaise mixture; stir to combine.
Spread each bread slice with butter. Spread ham evenly over half of the bread slices. Top with remaining bread; press lightly.(Make-ahead: Place on rimmed baking sheet and cover with damp tea towel; cover tightly with plastic wrap and refrigerate for up to 24 hours.) Trim crusts from bread. Cut each sandwich into four squares.
