Chunks of green avocado topped with diced red tomato give this guacamole a festive look. Surround it with Baked Tortilla Chips to scoop up every last bit.
Ingredients
- 4 ripe avocados 4 4ripe avocadoavocados
- 1/2 cup minced red onions 1/2 1/2cup cupminced red oniononions
- 2 tbsp minced jalapeño peppers 2 2tbsp tbspminced jalapeño pepperjalapeño peppers
- 2 tbsp lime juice 2 2tbsp tbsplime juice
- 2 tbsp extra-virgin olive oil 2 2tbsp tbspextra-virgin olive oil
- 3 cloves garlic , minced3 3cloves garlic, minced
- 3/4 tsp salt 3/4 3/4tsp tspsalt
- 3/4 tsp pepper 3/4 3/4tsp tsppepper
- 1 plum tomato , diced1 1plum tomatoplum tomatoes, diced
- 2 tbsp minced fresh coriander 2 2tbsp tbspminced fresh coriander
Preparation
Pit and peel avocados; cube neatly. In bowl, gently toss together avocados, onion, jalape?epper, lime juice, 1 tbsp (15 mL) of the oil, garlic and 1/2 tsp (2 mL) each of the salt and pepper. (Make-ahead: Cover and refrigerate for up to 4 hours.)
In separate bowl, toss tomato with coriander and remaining oil, salt and pepper; sprinkle over avocado mixture.
