This fresh dressing is tasty tossed with warm peas or asparagus. Honey sweetens the lemon so you can get away with using half the oil that you would traditionally.
Ingredients
- 1/4 cup minced fresh mint 1/4 1/4cup cupminced fresh mint
- 1/4 cup lemon juice 1/4 1/4cup cuplemon juice
- 1/4 cup extra-virgin olive oil 1/4 1/4cup cupextra-virgin olive oil
- 2 tbsp minced fresh dill 2 2tbsp tbspminced fresh dill
- 2 tbsp Dijon mustard 2 2tbsp tbspDijon mustard
- 1 tbsp white wine vinegar 1 1tbsp tbspwhite wine vinegar
- 1 tbsp liquid honey 1 1tbsp tbspliquid honey
- 1 green onion , finely chopped1 1green oniongreen onions, finely chopped
- 1/2 tsp salt 1/2 1/2tsp tspsalt
- 1/2 tsp pepper 1/2 1/2tsp tsppepper
Preparation
In bowl or jar, whisk or shake together mint, lemon juice, oil, dill, mustard, vinegar, honey, onion, salt and pepper. (Make-ahead: Refrigerate in airtight container for up to 5 days.)
