Lemon Herb Marinade

This Mediterranean marinade is fabulous for our three kabobs.

Ingredients

  • 1/4 cup lemon juice
  • 1/4 cup extra virgin olive oil
  • 1 tbsp sherry vinegar or wine vinegar
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 strips (each 2 inches/5 cm long) lemon rind
  • 2 bay leaves, quartered
  • 2 tbsp chopped fresh herbs rosemary, oregano or parsley) or 2 tsp (10 mL) dried

Preparation

In small bowl, whisk together lemon juice, olive oil, vinegar, garlic, salt and pepper. Mix in lemon rind, bay leaves and herbs.

Additional information :

Substitution: Depending on your supply of herbs, vary the marinade by using basil, savory, mint, coriander or thyme.
