Lemon Herb Marinade
This Mediterranean marinade is fabulous for our three kabobs.
Servings: 1/2 cup (125 mL)
Ingredients:

1/4 cup (50 mL) each lemon juice and extra-virgin olive oil
1 tbsp (15 mL) sherry vinegar or wine vinegar
2 cloves garlic, minced
1/2 tsp (2 mL) each salt and pepper
4 strips (each 2 inches/5 cm long) lemon rind
2 bay leaves, quartered
2 tbsp (25 mL) chopped fresh herbs (rosemary, oregano or parsley) or 2 tsp (10 mL) dried
Preparation:
In small bowl, whisk together lemon juice, olive oil, vinegar, garlic, salt and pepper. Mix in lemon rind, bay leaves and herbs.
Additional Information

Substitution: Depending on your supply of herbs, vary the marinade by using basil, savory, mint, coriander or thyme.
