In large saucepan of boiling salted water, cook pasta 2 minutes less than package directions. Drain pasta and transfer to large bowl. Add oil, tossing to coat well. Let cool. Beat 1 of the eggs and stir into pasta. Set aside.

In saucepan, combine Homemade Bolognese Sauce and cinnamon; bring to boil. Reduce heat to medium-low; sim­mer for 5 minutes. Remove pan from heat; set aside.

In separate saucepan, melt butter over medium-low heat. Add flour all at once, stirring with whisk. Gradually pour in 4 cups of the milk, whisking constantly, until mixture is smooth. Add nutmeg; season with salt and pepper. Reduce heat to low; cook, stirring with wooden spoon, until béchamel sauce has thickened, about 10 minutes.

Meanwhile, in bowl, combine remaining eggs and remaining milk. Add to béchamel sauce and cook, stirring often, until sauce is thick and creamy, about
3 minutes. Remove saucepan from heat. Add 1 cup of the Asiago cheese and stir until melted. Let cool at room temperature, stirring occasionally to prevent skin from forming on sauce, 30 minutes.

Preheat oven to 350°F. In greased 13- x 9-inch baking dish, spread reserved pasta mixture. Cover with reserved Home­made Bolognese Sauce, smoothing top. Sprinkle with 1 cup of the remaining Asiago. Cover with reserved béchamel sauce, then remaining Asiago. (Make-ahead: Can be covered with foil and frozen for up to 2 months. Let thaw in refrigerator and increase cooking time by 10 minutes.)

Place baking dish on baking sheet and bake in centre of oven until cheese is golden and filling is bubbling, 50 to 60 minutes (if necessary, continue cook­ing for a few minutes under the broiler to brown the cheese well). Let stand for 20 to 30 minutes before cutting into pieces.
