Method

Preheat oven to 400°F. In baking dish, combine pears, honey, cider, cinnamon, and vanilla pod and seeds. Arrange pears, cut side down. Cover with aluminum foil and bake for 30 minutes. Remove foil, turn pears over; bake until tender, 10 to 15 minutes

Transfer pears to plate. Pour cook­-ing juices into small saucepan and boil until liquid is syrupy, 3 to 5 minutes. Meanwhile, return pears to baking dish, cut side up, and top with Camembert slices. Bake until cheese has melted,
2 to 3 minutes.

Drizzle syrup over serving platter. Arrange pears on top of syrup and top with Oatmeal Crisp; sprinkle with microgreens, if using.

Oatmeal Crisp Preheat oven to 400°F.
In bowl, combine 1/4 cup each large-flake oats and brown sugar, 3 tbsp melted unsalted butter, 2 tbsp all-purpose flour and pinch fleur de sel. Spread mixture on parchment paper-lined baking sheet. Bake, stirring halfway through cooking time, until mixture is crispy and lightly browned, 10 to 12 minutes. Let cool, then break into pieces. (Make-ahead: Can be stored in airtight container at room temperature for up to 1 week.)  Makes 1/2 cup.
