Hearty family favourites such as soups and stews are best eaten with a bit of crunch on the side. Enter our Blue Cheese Coleslaw, the ideal accompaniment to, well, almost everything in your winter recipe repertoire.

Ingredients

  • 1/2 cup light mayonnaise
  • 40 g blue cheese , crumbled
  • 2 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon water
  • 1/2 teaspoon pepper
  • Quarter head each red and green cabbage , thinly sliced (about 6 cups total)

Method

In bowl, stir together mayonnaise, blue cheese, vinegar, mustard, water and pepper.

Place cabbage in large bowl; scrape mayonnaise mixture over top. Stir until combined; let stand for 20 minutes before serving.
