Method

In large heatproof bowl, combine couscous and boiling water. Cover and let stand about 5 minutes.

Meanwhile, in small bowl, combine oil, lemon zest and juice; season with salt and pepper. Pour dressing over couscous and fluff with fork. Add chicken, peas, tomatoes, cucumbers, shallot, parsley and mint. Season with salt and pepper; stir gently to combine thoroughly.
