Method

In microwaveable bowl, combine sugar and vinegar; season with salt. Heat in microwave on high for 20 seconds. Add carrot and cucumber; stir to coat. Let rest for 10 minutes.

Meanwhile, in small bowl, combine mayonnaise, garlic, fish sauce, sriracha and oil. Gently mix in shrimp. Drain pickled vegetable mixture and divide among buns. Divide shrimp mixture among buns. Garnish with cilantro.
