Marinated Carrot Salad
This recipe makes 2 cups servings
Ingredients

2 cups (500 mL) sliced carrots
1/4 cup (50 mL) chopped onion
1/4 cup (50 mL) chopped sweet green pepper
1/4 cup (50 mL) chopped celery
1/3 cup (75 mL) granulated_sugar
1/4 cup (50 mL) vegetable_oil
1/4 cup (50 mL) white vinegar
1/4 cup (50 mL) condensed cream of tomato soup
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) dry_mustard
1/4 tsp (1 mL) pepper
Preparation
In saucepan of boiling salted water, cook carrots, onion, green pepper and celery for 2 minutes or until tender-crisp. Drain; refresh under cold running water. Drain again and transfer to bowl.
In small bowl, whisk sugar, oil, vinegar, soup, salt, mustard and pepper; pour over carrot mixture. Toss well. Marinate, covered, overnight, stirring occasionally. Before serving, strain; taste and adjust seasoning.
