Marinated Cucumber Salad
Servings: 2 cups (500 mL)
Ingredients:

1 Cucumber (8 inches/20 cm)
1 cup (250 mL) Water
1/4 cup (50 mL) White vinegar
1/4 cup (50 mL) Granulated sugar
1/4 tsp (1 mL) Each salt, mustard seed and celery seed
Preparation:
Peel and slice cucumber thinly; place in bowl. In saucepan, bring water, vinegar, sugar, salt, mustard seed and celery seed to boil, stirring to dissolve sugar; pour over cucumber. Let cool. Cover and refrigerate overnight. Strain before serving.
