Marinated Kale Salad

Letting this salad marinate for a little while allows the kale to soften and all the flavours to intensify.

  • 3 tbsp 3tbspolive oil
  • 2 tbsp 2tbsporange juice
  • 1 tbsp 1tbspliquid honey
  • 1 1bunch kale, stemmed and chopped
  • 1/3 cup 1/3cupdried cherries, chopped
  • 1/3 cup 1/3cupchopped hazelnuthazelnuts, toasted

In large bowl, whisk together oil, orange juice and honey; add kale and cherries. Toss to coat. Let stand for 1 hour.

Serve sprinkled with hazelnuts.
