Mesclun Salad with Sherry Vinaigrette
Mesclun is a mix of young salad greens, such as arugula, dandelion, frisée, mizuna, oak leaf, mâche, radicchio and sorrel, sometimes called "gourmet salad mix" at the grocery store. In a pinch, substitute your own favourite greens.

8 cups (2 L) mesclun
Half sweet red pepper, thinly sliced
1/4 cup (50 mL) chopped fresh chives
Vinaigrette:
3 tbsp (50 mL) olive oil
2 tbsp (25 mL) sherry vinegar
1 tsp (5 mL) chopped fresh thyme
1 tsp (5 mL) Dijon mustard
1/4 tsp (1 mL) granulated sugar
1/4 tsp (1 mL) each salt and peppe
Preparation:
Vinaigrette: In large bowl, whisk together oil, vinegar, thyme, mustard, sugar, salt and pepper. (Make-ahead: Cover and refrigerate for up to 4 hours.)
Add mesclun, red pepper and chives; toss to coat.
