Bite-size versions of this ham-and-cheese classic get dressed in a coating of b?amel sauce and cheese before broiling.

Suggested Recipes

2 tbsp (25 mL) butter
2 tbsp (25 mL) all-purpose flour
1 cup (250 mL) milk
Pinch each salt and pepper
4 slices light rye bread, crusts removed
4 tsp (20 mL) dijon mustard
4 slices black forest ham (about 4 oz/125 g)
1/2 cup (125 mL) shredded Gruy? or swiss cheese
1 tbsp (15 mL) chopped fresh parsley
Preparation:
Toast bread. Spread with mustard; top with ham. Transfer to greased rimmed baking sheet. Spoon sauce over top; sprinkle with cheese. Broil until cheese bubbles and begins to brown, about 2 minutes. Let stand for 1 minute; cut into quarters. Sprinkle with parsley.
