Ingredients

  • 4 cups medium shell pasta
  • 2-1/2 cups frozen mixed vegetables
  • 1 can (385 mL) 2% evaporated milk
  • 1/2 cup light cream cheese
  • 2 tsp lemon juice or cider vinegar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp Dijon mustard
  • 2 cans (each 6 oz/170 g) tuna, drained and broken into chunks

Preparation

In pot of boiling salted water, cook pasta for 4 minutes. Add vegetables and return to boil; cook for 3 to 4 minutes or until tender but firm; drain in colander.

In same pot, whisk together evaporated milk, cream cheese, lemon juice, salt, pepper and mustard until blended and hot.

Return pasta mixture to pot; stir in tuna.

Additional information :

Substitutions: No tuna? Try diced ham, canned salmon or smoked chicken. For veggies, try a frozen stir-fry mix, canned Mexican style corn or chopped fresh spinach.
