Passion Fruit Bellini
Usually made with peaches, this cocktail uses passion fruit instead. Champagne instead of sparkling white wine could be a special occasion choice.

1 passion fruit
1 tbsp (15 mL) granulated sugar
1 bottle (200 mL) sparkling wine
Preparation:
Cut passion fruit in half; scoop out pulp and press through fine sieve into bowl to collect juice and remove seeds. Stir in sugar until dissolved. (Can be prepared to this point, covered and refrigerated for up to 4 hours.) Divide between champagne glasses. Gently pour wine into each.

Tip: You can substitute 1 cup (250 mL) passion fruit juice blend for the passion fruit. Omit sugar.
