Silky-smooth, with the subtle flavours of pear and celery, every spoonful is a delight in this soup that's elegant enough for entertaining.
Ingredients
- 3 tbsp butter 3 3tbsp tbspbutter
- 5 cups finely chopped celery 5 5cups cupsfinely chopped celery
- 4 onions , sliced4 4oniononions, sliced
- 1/4 cup minced fresh chives 1/4 1/4cup cupminced fresh chives
- 1/2 tsp dried thyme 1/2 1/2tsp tspdried thyme
- 1/2 tsp salt 1/2 1/2tsp tspsalt
- 1/4 tsp pepper 1/4 1/4tsp tsppepper
- 6 cups vegetable stock 6 6cups cupsvegetable stock
- 3 pears , peeled, cored and sliced3 3pearpears, peeled, cored and sliced
- 1/2 cup 10% cream 1/2 1/2cup cup10% cream
Preparation
In saucepan, melt butter over medium heat. Cook celery, onions, chives, thyme, salt and pepper, covered and stirring occasionally, for about 10 minutes or until softened and translucent.
Pour in stock; bring to boil. Reduce heat and simmer for 10 minutes or until celery is very tender. Add pears; cook for 5 minutes or until pears are tender.
In batches, purée in blender. Return to saucepan; pour in cream and heat through without boiling.
