These easy popovers can be made ahead, leaving you free for last-minute entertaining. Let them stand at room temperature for up to 8 hours, then reheat in 325°F (160°C) oven for 5 to 10 minutes.

Ingredients

  • 2 eggs 2 eggs
  • 1 cup milk 1 cup milk
  • 1 cup all-purpose flour 1 cup all-purpose flour
  • 1/2 tsp salt 1/2 tsp salt

Preparation

In bowl, beat eggs with milk; stir in flour and salt until blended but still lumpy. Pour into 8 greased muffin cups, filling three-quarters full.

Place pan on centre rack in cold oven. Set oven at 450°F (230°C); bake until golden brown, 20 to 25 minutes.

With skewer, puncture each popover. Turn off oven and let popovers stand in oven until crisp, about 10 minutes.
