Fresh herbs and salt-cured ham add delicious flavour and interest to this Italian-style fish.
Ingredients
- 1 tsp 1tspchopped fresh thyme
- 1/4 tsp 1/4tsppepper
- 4 4firm-fleshed white fish filletwhite fish fillets, (such as Pacific cod, catfish, tilapia or rainbow trout), about 1 lb (500 g)
- 8 8slices prosciutto, (about 4 oz/125 g)
- Lemon wedges
Preparation
Sprinkle thyme and pepper all over fish; wrap each in prosciutto to almost cover. Secure with toothpick, if necessary.
Place on greased grill over medium-high heat; close lid and grill, turning once, until prosciutto is crispy and fish flakes easily when tested, about 6 minutes. Serve with lemon wedges.
