Fresh herbs and salt-cured ham add delicious flavour and interest to this Italian-style fish.
Ingredients
- 1 tsp chopped fresh thyme 1 1tsp tspchopped fresh thyme
- 1/4 tsp pepper 1/4 1/4tsp tsppepper

- 8 slices prosciutto , (about 4 oz/125 g)8 8slices prosciutto, (about 4 oz/125 g)
- Lemon wedges Lemon wedges
Preparation
Sprinkle thyme and pepper all over fish; wrap each in prosciutto to almost cover. Secure with toothpick, if necessary.
Place on greased grill over medium-high heat; close lid and grill, turning once, until prosciutto is crispy and fish flakes easily when tested, about 6 minutes. Serve with lemon wedges.
