Prosciutto-Wrapped Fish
Fresh herbs and salt-cured ham add delicious flavour and interest to this Italian-style fish.

1 tsp (5 mL) chopped fresh thyme
1/4 tsp (2 mL) pepper
4 firm-fleshed white fish fillets (such as Pacific cod, catfish, tilapia or rainbow trout), about 1 lb (500 g)
8 slices prosciutto (about 4 oz/125 g)
Lemon wedges
Preparation:
Sprinkle thyme and pepper all over fish; wrap each in prosciutto to almost cover. Secure with toothpick, if necessary.
Place on greased grill over medium-high heat; close lid and grill, turning once, until prosciutto is crispy and fish flakes easily when tested, about 6 minutes. Serve with lemon wedges.
