Fresh herbs and salt-cured ham add delicious flavour and interest to this Italian-style fish.

Ingredients

  • 1 tsp chopped fresh thyme
  • 1/4 tsp pepper
  • 4 firm-fleshed white fish fillets, (such as Pacific cod, catfish, tilapia or rainbow trout), about 1 lb (500 g)
  • 8 slices prosciutto, (about 4 oz/125 g)
  • Lemon wedges

Preparation

Sprinkle thyme and pepper all over fish; wrap each in prosciutto to almost cover. Secure with toothpick, if necessary.

Place on greased grill over medium-high heat; close lid and grill, turning once, until prosciutto is crispy and fish flakes easily when tested, about 6 minutes. Serve with lemon wedges.
