Quick Homemade Tomato Soup
It is always good to have quick nutritious recipes on hand for last-minute lunch ideas. This takes only about 10 minutes to prepare and is a delicious way to enjoy tomatoes, which have excellent amounts of vitamin C, beta carotene, potassium, folate and vitamin E.

Suggested Recipes

2 tbsp (25 mL) vegetable oil
2 onions, chopped
4 cloves garlic, minced
1 can (28 oz/796 mL) stewed tomatoes
3 cups (750 mL) vegetable or chicken stock
1/4 cup (50 mL) tomato paste
1/4 tsp (1 mL) pepper
Preparation:
In saucepan, heat oil over medium heat; cook onions and garlic, stirring, for 5 minutes or until softened. Add tomatoes, stock, tomato paste and pepper; bring to boil. Reduce heat and simmer for 15 minutes or until slightly thickened.
Using immersion blender or in blender, pur? reheat if necessary.
