Quick Homemade Tomato Soup

It is always good to have quick nutritious recipes on hand for last-minute lunch ideas. This takes only about 10 minutes to prepare and is a delicious way to enjoy tomatoes, which have excellent amounts of vitamin C, beta carotene, potassium, folate and vitamin E.

  • 2 tbsp 2tbspvegetable oil
  • 2 2oniononions, chopped
  • 4 4cloves garlic, minced
  • 1 can (28 oz/796 mL) 1can (28 oz/796 mL)stewed tomatoes
  • 3 cups 3cupsvegetable stock or chicken stock
  • 1/4 cup 1/4cuptomato paste
  • 1/4 tsp 1/4tsppepper

In saucepan, heat oil over medium heat; cook onions and garlic, stirring, for 5 minutes or until softened. Add tomatoes, stock, tomato paste and pepper; bring to boil. Reduce heat and simmer for 15 minutes or until slightly thickened.

Using immersion blender or in blender, puree reheat if necessary.
