This cheese ball is very simply, fast to make and can be prepared ahead of time. I have raves all the time when I make it and it gone in a flash. Great for company and also the kids lunches, after school or just because its so good and needs very few ingredients.

Method1)Cut your cream cheese into 4 pieces and place into food processor. Blend while adding just enough sour cream to help it become smooth like a heavy cream consistency.
2) add chopped green onions and cheddar cheese. Blend and add more sour cream if needed to bring to a smooth spreadable texture.
3) Now you can either make the pine cone shape or simply place on a plate or in a container ( flower pots look great as well ) and top with toasted almonds if you wish or eat it as is.
Pine Cone: Shape the mixture into two pine cone shapes with a rounded end and more pointed end. Place them on a place with the two rounded ends just touching, which will make the pointed ends flair out. If you like you can chill it until just before the company comes. You will now add the almonds. If your cheese is stiffer and the almonds are not sticking then spread a thin layer of sour cream over the cheese before adding almonds.
Place your toasted almonds starting at the point and layer in a scaling effect all the way to the top. Once done you will have two realistic looking pine cones. You can add if you wish a small pine branch and a big red bow. Keep this chilled and take out when ready to serve. The company will be amazed at how good it is and only you will know how simple it was.
Our children when young had friends at school try and trade their lunches for some cheese ball and crackers, it was a real hit and still is as they make it into adult hood now. You will make it all the time and it can be made in 10 to 15 minutes if you are making it simple and plating it . The Pine cone shape was only for a special occasion for company that you want to impress with your talents. Serve with crackers or rye rounds
