Apple Sage Breakfast Sausage Patties

Apple adds moistness and a touch ofsweetness to these delicious patties; pancetta, an Italian bacon, adds richness.Use an unsliced chunk of pancetta for best results.

Ingredients

  • 2 green onions thinly sliced
  • 1 Red Delicious apple peeled and grated
  • 2 teaspoons ground coriander
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried marjoram
  • 1/4 teaspoon pepper
  • 1 tablespoon vegetable oil
  • 1 lb lean ground pork
  • 1 cup diced pancetta

Method

In bowl, mix together pork, pancetta, green onions, apple, coriander, salt, sage, pepper and 1 tbsp (15 mL) water. Form by 1/4 cupfuls into patties. (Make ahead: Refrigerate in airtight container for up to 24 hours.)

In cast-iron or regular skillet, heat vegetable oil over medium-high heat; fry patties, in batches and turning once, until browned, about 5 minutes. Transfer to baking sheet.

Bake patties in 375°F (190°C) oven until digital rapid-read thermometer inserted into centre of patty reads 160°F (71°C), about 10 minutes.
