Apricot-Orange Muffins

These small tasty muffins are low in fat.

Ingredients

  • 1 cup orange juice
  • 1/2 cup chopped dried apricot
  • 1/2 cup raisin
  • 1 egg
  • 1 egg whites
  • 2 tablespoons butter melted
  • 1 1/2 teaspoon vanilla
  • 2 cups all-purpose flour
  • 3/4 cups granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 pinch nutmeg

Method

Combine orange juice, apricots, raisins, egg, egg white, butter and vanilla. In large bowl, combine flour, sugar, baking powder, baking soda and nutmeg; stir in juice mixture just until blended. Fill greased muffin cups three-quarters full. Bake in 350°F (180°C) oven for 20 to 25 minutes or until golden and firm to the touch.
