Black and Orange Rice

Savour the flavours of the harvest in this side dish, which is just the right colour combination for Halloween.

  • Portion size 10 servings

Ingredients

  • 3 cups chicken stock
  • 2 cups long-grain rice
  • 1/2 cup drained rinsed canned black bean
  • 1/2 cup diced peeled butternut squash
  • 1 tablespoon butter
  • 1/2 teaspoon salt

Method

In saucepan, bring stock to boil. Add rice, beans, squash, butter and salt ; return to boil. Reduce heat; cover and simmer until rice is tender and no liquid remains, 20 minutes. (Make-ahead: Cover and refrigerate for up to 1 day. To reheat, microwave at Medium-High/70% for 5 to 7 minutes, stirring occasionally with fork.)
