Chef's Dinner Salad With French-Style Dressing

Mixed salad greens and a few ingredients from the deli make fast work of dinner. Substitute whatever deli meat or cheese you have in your fridge for the turkey and Havarti.

Ingredients

  • 1 bag (5 oz/140 g) mixed salad greens (about 6 cups)
  • 2 ribs celery thinly sliced
  • 1 carrots shredded
  • 6 oz smoked turkey cut in sticks or strips
  • 1 cup cubed garden vegetable Havarti cheese
  • 1 cup cubed dill Havarti cheese
  • 1 cup halved grape tomato
French-Style Dressing:
  • 2 tablespoons ketchup
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon pepper
  • 1 pinch salt
  • 1/4 cup olive oil

Method

French-Style Dressing: In small bowl, whisk together ketchup, vinegar, paprika, mustard, pepper and salt. Drizzle in oil, whisking until emulsified.

In large bowl, toss together salad greens, celery, carrot and dressing. Arrange turkey, cheese and tomatoes on top.
