Chocolate Zucchini Loaf

Got this from a friend years ago. Makes 2 loaves. You can freeze extra grated zucchini for future use.

  • 4 eggs
  • 3 cups sugar
  • 1 1/2 cup vegetable oil
  • 12 tablespoons cocoa
  • 3 cups flour
  • 1/5 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups zucchinis finely grated


Pre-heat oven to 350 F.

Beat eggs well, then add in sugar, 1/2 cup at a time. Add oil, then cocoa to the eggs and sugar.

In a separate bowl, combine dry ingredients: flour, baking powder, baking soda and salt. Add into egg mixture. Mix in zucchini.

Pour into two greased & floured or parchment-lined bread pans. Bake for 1 hour 15 minutes. Remove from oven and let cool on racks before removing from pans.
