Serve for dinner with a crusty loaf of bread! Made with healthy ground turkey, instead of beef. Great fall meal with lots of veggies in it!

Ingredients

  • 2 lbs lean ground turkey
  • 2 cans diced tomatoes with liquid
  • 1 yellow onion
  • 1 red pepper
  • 2 carrots
  • 2 tomato paste
  • 5 okra sliced
  • 3 garlic cloves peeled, minced
  • 2 tablespoons chili powder
  • 1 tablespoon cayenne
  • 1 teaspoon ground pepper
  • 1/2 teaspoon salt
  • 3 dashes Worcestershire sauce
  • 1 kidney bean drained
  • 1/2 cup brown rice
  • 1/2 cup white rice
  • 1 1/2 cup shredded Monteray Jack cheese
  • 1 1/2 cup shredded sharp Cheddar cheese
  • 1 dash hot sauce to taste
  • 2 cups water
  • 3 tablespoons olive oil

Method

Cook ground turkey in olive oil, put into large pot. Add the rest of the ingredients to pot. Bring to boil, then reduce heat an simmer 45 min with lid on. Serve sprinkled with shredded cheese on top!
