  • 1 tablespoon red wine vinegar
  • 1 pinch each salt and pepper
  • 1 cup cooked quinoa
  • 1 carrots shredded
  • 1 zucchini shredded
  • 1/4 cup chopped fresh dill
  • 1/4 cup crumbled feta cheese

Method

In bowl, whisk together oil, vinegar, salt and pepper; add quinoa, carrot, zucchini, dill and feta cheese. Toss until well combined.
