Heavenly two-bite pizzas combine sweet fig jam with sharp, flavourful cheese. They are a snap to put together and are a dream for quick outdoor grilling. You can also bake these on a baking sheet in a 350?F (180?C) oven until the cheese is melted, 6 to 8 minutes.

  • Portion size 12 servings

Ingredients

  • 3 tablespoons fig jam
  • 12 whole wheat pita
  • 1/2 cup crumbled gorgonzola cheese (about 2 oz/55 g)
  • 1 teaspoon chopped fresh thyme
  • 1 cup arugula chopped
  • 1/2 teaspoon vegetable oil
  • 1/2 teaspoon lemon juice

Method

Spread fig jam on each pita; top with Gorgonzola cheese and thyme. Place on greased grill over medium heat; close lid and grill until cheese is melted, about 3 minutes. Transfer to serving platter.

Meanwhile, toss together arugula, oil and lemon juice; arrange over pizzas.
