With our family's love of Cheddar and the apples growing in our yard this is a perfect combination! We use Goodland or Mac apples and local Glenwood cheddar.

Pre-heat a griddle to med-hot. Butter one side of each piece of bread and put two buttered sides together; making 4 sandwiches. On each sandwich top with 1 slice of cheese, then apple slices and another cheese. Lift up top slice of bread with toppings and place it on the hot griddle, buttered side down; top with the other slice of bread buttered side up. Brown for 5 minutes or until golden. Turn over carefully and brown other side until golden. Serve with a smile.
