Ingredients

  • 4 peaches halved and pitted
  • 1 tablespoon butter melted
  • 1/4 cup liquid honey
Filling:
  • 3/4 cups ricotta cheese
  • 2 teaspoons liquid honey
  • 1/2 teaspoon grated lemon rind
  • dash vanilla

Method

Filling:
In bowl, combine ricotta cheese, honey, lemon rind and vanilla; set aside.

Brush cut sides of peaches with butter. Place, cut side down, on greased grill. Close lid and grill over medium-high heat until peaches are softened and grill-marked, 8 to 12 minutes.

Spoon heaping 1 tbsp (15 mL) ricotta mixture into each peach; drizzle with honey.
