Hungry Man's Casserole

This is a simple 6-ingredient recipe handed down to me by my mother (back then it was called the "Poor Man's Casserole). It is hearty, tasty, and filling, and loved by all the men in my family. The recipe can easily be doubled, with second casserole refrigerated and reheated.

Preheat oven to 350 F. In a large frying pan, saute sliced onions in butter/margarine. In a separate frying pan, cook ground beef and drain off fat OR put the meat in a plastic colander over a deep bowl and cook in micro on HIGH for 6 minutes, breaking up meat half-way (this will automatically drain off all the fat). While meat is cooking, prepare the potatoes. Add meat to onions and stir to mix. Season with Mrs. Dash to taste. Spray round glass 1 1/2 qt. casserole with cooking spray (e.g. Pam). Line casserole with potato slices, add half beef mixture, cover with half of the can of cream corn, layer more potatoes over the corn, then the rest of the beef mixture, top with rest of the corn. Put lid on casserole and bake for at least one hour. Serve with salad (and/or apple sauce, if you have children).
